I try to bake around the holidays. Each year I add something new to the roster, or try to! I’m not a seasoned baker but I’m not a complete novice either. I typically bake my holiday biscotti and Italian Christmas cookies this time of year and pass them out to friends, family and neighbors.
This year I looked up a few different recipes over Thanksgiving and made three of them. My whole family loved them all and now I know I can actually bake something other than my cookies and plain cheesecake!
I should add, none of these recipes are mine. I searched and ended up choosing these three based on reviews and how easy it was to follow the recipes. I will change recipes and add or subtract certain ingredients when I feel comfortable doing so but I honestly didn’t change much in any of these!
Triple Berry Crisp
I made this for my Dad since he likes berries. He never really eats pie or cake when we have it and I wanted to make a dessert he would actually eat. At first he said it didn’t look done because the crisp doesn’t fully cover the berries but after eating a slice warmed up with vanilla ice cream, he fell in love. I replaced the cinnamon for brown sugar!
Salted Caramel Apple Tart
Okey, this one is a WINNER! I made two of these. The first one I used a cake pan…big mistake but it tasted good. The second one came out perfect. This is my pride and joy of the year for sure! I played with the lattice and even made little leafs out of the dough! One thing I did do differently on my second pie was an egg wash instead of cream like the recipe calls for. I found it gave the top that nice toasted look but other than that, this recipe is fire!
Classic Pumpkin Cheesecake
I make cheesecake every year and what goes in it is a secret. Everyone tells me it’s amazing and I take pride in my signature cake! I learned so much from this recipe though and I know my normal cheesecake will get better because of that! I made one of these for each of my neighbors and they all loved it. In facts, I’m making another one this week!
